Pineapple-Pecan Upside Down Cake--- MBP- Something Sweet

Yesterday, 14th May, was my hubby, S's, birthday. This was the perfect occasion for me to try out the Pineapple-Pecan Upside Down cake, for which both S and me were craving for a long time. Actually, it was S who first came across this recipe on Trupti's 'The Spice Who Loved Me'. Since then he has been asking me to try it out, but, for some reason or the other it never happened. Finally, yesterday I decided to surprise S with this deliciously mouth-watering cake which was originally posted by Burekaboy of 'Is-that-my-bureka?'. This is my entry for Coffee's MBP: Something Sweet.
I just made one change to the recipe...instead of using 1/2 cup AP flour + 1/2 cup cake flour, I used 1/2 cup AP flour + 1/2 cup whole wheat flour (atta).
The result was mind-blowing and the whole wheat flour worked very well in the recipe! This cake is soooooooo delicious that I had a tough time waiting for S to get back from work and cut the cake before I could eat it.

hi there :D your rendition of this cake looks AMAZING! i wouldn't have thought to use atta flour instead of the cake or AP (i guess fearing it would make the cake tougher since the cake flour has a much lower protein content). i'll have to try it next time to compare.

i'm jealous, LOL --> you got SO MANY pecans on yours compared to mine!! those are one of the best parts. btw, this particular cake is just as good over the next day or two. anyway, glad you and your husband liked it and it turned out so beautifully. thank you for the mention :)

I was also not sure at first how the recipe would turn out using whole wheat flour...but the end result was pretty good!Your recipe was so perfect that even me,who does not have much experience in baking could bake a decent cake. Thanks again!

I came to your site searching for the Goda masala recipe, but having found that your hubby's date of birth is same as mine, I will denitely try that pineaplle cake, but more importantly, will keep coming back for more!

Has any1 tried using fresh pineapple pieces. I have some fresh dole pineapple in the fridge...and cut in the same way like the tinned one's...was wondering if i can use them instead.

Although I have never tried using fresh pineapple, I don't see why you may not be able to use them in this recipe. But again, I have no prior experience to base this suggestion on. You can always experiment and find out. I am sure it will turn out ok.
